Spice Mixes


In some of the recipes given on this site certain spice mixes are used that are a bit different form the ones you can buy. For that reason they are given here. These recipes all have in common that you need a mortar or electric spice grinder to make them. After grinding the resulting spice mixes should be stored dark and airtight to keep the flavour fresh as long as possible.

Chili Mix

Now don't think this is just the ordinary chili mix: Use this
mix with caution and very small amounts at a time because
it is dangerously hot!
  • 5 a 6 T dried chilipeppers
  • 3,5 T  coriander seed
  • 1 T cumin seed
  • 3/4 T garlic powder
  • 2 T oregano
  • 1 T paprika powder
  • 1 T salt
Baharat

This spice mix from the Middle East is extremely delicious
with couscous. And if you have some left, just eat it cold as
a salad the next day: yummie!
  • 1 1/2 T black peppercorns
  • 2 T  coriander seed
  • 2 T ground cinnamon
  • 2 T cloves
  • 1 T cumin seed
  • 3 T paprika powder
  • 2 T freshly ground nutmeg
  • bit of cardemom
